Tartare sauce
1 anchovy fillet
10g spring onion
40g pickled gherkins
20g capers
2 egg yolks
20g lemon juice
1 tsp Dijon mustard
pinch salt and pepper
100g light olive oil
Add anchovy fillet and spring onion to TM Bowl. Chop for 5 seconds/Speed 9.
Add gherkins and capers to mixing bowl and chop for 2 seconds/Speed 5. Scrape down sides.
Add the egg yolks, lemon juice, mustard, salt and pepper.
Set timer for 4 minutes/37°C/Speed 4.
After 1 minute passes (3 minutes left on timer), hold MC down (so it doesn’t float) and pour oil directly and steadily onto the lid until it reaches the top of the rim.
Refrigerate until cool.
Serve with fresh or cooked seafood.
