Cookies and Cream Oreo Slice
Ingredients
For the base:
250g Oreo biscuits
150g butter
For the filling:
3 tsp powdered gelatine
50g hot water
200g white chocolate
400g cream cheese
250g cream
100g sugar
1 tsp vanilla essence
150g Oreo biscuits
Method
Line a 20 x 30cm slice tin with baking paper or cling wrap.
For the base:
Mix 250g Oreos and butter for 15 seconds/Speed 4.
Press into the base of the slice tin.
Refrigerate while preparing the filling.
For the filling:
Dissolve the gelatine in hot water in a heat proof glass.
Melt the white chocolate for 2 minutes/90°C/Speed 2.
Add the cream cheese, cream, sugar, vanilla and dissolved gelatine and mix for 30 seconds/Speed 4.
Add the remaining 150g Oreo biscuits.
Chop for 1 second/Turbo speed so that there are still chunks of biscuits.
Pour over the base and refrigerate for around 4-6 hours until set.
Slice into 24 pieces. Keep refrigerated for 4-5 days.
