Succulent, smoky pork ribs are tender and finger-licking good. A guaranteed crowd pleaser and super easy with your Thermomix.



BBQ Chipotle Pork Ribs


Spice Marinade
100g onion, peeled and quartered
3 cloves garlic
100g brown sugar
1 Tbsp Chipotle chilli powder
1 tsp salt
2 tsp mustard powder
1 tsp ground pepper
150g water
2-2.5kg pork back ribs

Chipotle Barbecue Sauce
50g onion
2 cloves garlic
30g butter
1 tsp paprika
1 tsp Chipotle chilli powder
180g tomato sauce
50g brown sugar
60g apple cider vinegar
10g Dijon mustard
20g Worcestershire sauce


Spice Marinade
Add onion and garlic to TM Bowl and chop at Speed 9 for 5 seconds.
Scrape down sides of Bowl.
Add remaining Spice Marinade ingredients to the TM Bowl.
Mix at Speed 5 for 10 seconds.
Remove any excess fat from the ribs and chop into pieces.
Place the ribs in a large oven proof dish and spread the spice marinade over both sides of the ribs.
Cover with foil or oven proof lid and refrigerate for at least 2 hours, or overnight.
Preheat the oven to 150°C.
Cook the ribs in the oven dish covered with foil or lid for 2 – 3 hours or until the meat is tender.

Chipotle Barbecue Sauce
Add onion and garlic to TM Bowl and chop at Speed 9 for 5 seconds.
Scrape down sides of Bowl.
Add the butter, Chipotle Chilli powder and paprika to the TM Bowl.
Cook at 80°C, Speed 2 for 3 minutes.
Add the remaining ingredients and cook at 90C, Speed 3 for 10 minutes.

When the ribs have finished cooking, remove from the oven and remove the foil or lid.
Heat the oven to 200°C.
Brush the ribs with half of the BBQ sauce.
Return to the oven for 10-15 minutes.
Serve with the remaining sauce.
