Bacon and Egg Pies
Ingredients
2 sheets frozen puff pastry, defrosted
30g butter, melted
150g bacon, rind removed and roughly chopped
80g onion, quartered
30g olive oil
8 eggs
50g cream
100g mozzarella cheese, grated
Method
Preheat oven to 180°C.
Brush each pie tin with melted butter.
Cut puff pastry sheets into quarters.
Line each pie tin with a square of puff pastry.
Brush each square with butter and prick the base with a fork.
Place the bacon, onion and olive oil in the TM Bowl and chop for 5 seconds/Speed 4.
Cook for 5 minutes/Varoma temp/Reverse Speed 1 with the MC OFF.
Sprinkle bacon and onion mix evenly in each pie tin.
Without washing the bowl, add the eggs and cream.
Mix at for 10 seconds/Speed 4.
Pour evenly into each pie dish.
Top with grated mozzarella cheese.
Bake for 20-25 minutes at 180°C until golden.
